For 2 – 10” pies
6 eggs
2 pumpkins
2 cups sugar
1 ½ tsp salt
6 tsp pumpkin pie spice (or koek & speculaas, or a mixture of ginger, white pepper, cinnamon, cloves, nutmeg and cardamom)
¾ tsp cloves
¾ tsp cinnamon
3 cans condensed milk
For 1 – 8-9” pie
2 eggs
1 pumpkin
¾ cup sugar
½ tsp salt
2 tsp pumpkin pie spice
¼ tsp cloves
¼ tsp cinnamon
1 can condensed milk
Cut pumpkin in half and remove seeds
Put pumpkin halves cut-side-down on baking tray
Roast for a very long time on a really low temperature until completely soft.
Scrape pumpkin flesh from skin.
Puree the flesh or mash and strain it. You should have approximately 1-2 cups per pumpkin. No need to measure.
Beat eggs slightly. Beat in all other ingredients.
Heat oven to 425 degrees F
Put pie shells on rack of oven, sticking out
Pour filling into shells
Push rack into oven and shut door
Reduce temp to 350 degrees F
Bake until set, approx 45 min to 1 hour, longer if 2 pies at once.
Looks good. This is what I like to bake for the various Fall dinners and have had good luck with:
White Chip Pumpkin Spice Cake
Ingredients
* 1 pkg. (18.25 oz.) spice cake mix
* 3 large eggs
* 1 cup Pure Pumpkin
* 2/3 cup (5 fl.-oz. can)Evaporated Milk
* 1/3 cup vegetable oil
* 2 cup (6 oz.) White Chocolate Chip morsels
Directions
PREHEAT oven to 350° F. Grease and flour 12-cup Bundt pan.
COMBINE cake mix, eggs, pumpkin, evaporated milk and vegetable oil in large mixer bowl. Beat at low speed until moistened. Beat at medium speed for 2 minutes; stir in morsels. Pour into prepared Bundt pan.
BAKE for 40 to 45 minutes or until wooden pick inserted in cake comes out clean. Cool in pan on wire rack for 25 minutes; invert onto wire rack to cool completely. Drizzle White Chip Cinnamon Glaze glaze over cake.
FOR WHITE CHIP CINNAMON GLAZE:
HEAT 3 tablespoons Evaporated Milk in small, heavy-duty saucepan over medium heat just to a boil; remove from heat. Add 1 cup (6 oz.) White Chocolate Chip morsels; stir until smooth. Stir in 1/2 teaspoon ground cinnamon.
